Japanese Teriyaki Chicken Recipe - Tori no Teriyaki Recipe


Teriyaki is a very popular dish in Japanese cuisine. Teriyaki is a way of Japanese cooking. Teri means luster and yaki means grill or broil.

Ingredients:

2 chicken thighs (boneless cut)
4 Tbsp sake (mirin, sweet sake used for spice, is OK too)
4 Tbsp soy sauce
1 Tbsp salad oil for frying
2 eggs
1 tsp black sesame seed

A bunch of komatsuna (Japanese mustard greens).
* Spinach (horenso), broccoli, or string beans (ingen mame) are also OK if komatsuna is not available.
* Caution: using mirin makes this dish easy to burn!

Directions:

1. Put chicken in a deep container with the sake (or mirin), and soy sauce. Let marinate for 30 minutes. In hot weather, be sure to do this in a refrigerator. You can also marinate like this for 24 hours, planning to cook the next day.

2. Heat up the frying pan, pour in the oil. Fry the chicken on the skin-side first. After lightly sauteing, cover and let steam cook for about 5 minutes. This will burn easily, so check under the lid occasionally. When one side has turned golden brown, flip the chicken and cook the other side for about 4 minutes.

3. Once the chicken has a beautiful tan, pour the remaining marinate over the chicken, continuing to cook this into a glaze that shines. Remember to take special care with mirin, as it will burn easily.

4. Boil water in a pot, and boil an egg to whatever hardness you like best (We recommend an 8 minute boil for a soft-boiled egg). Peel the egg, cut in half and sprinkle black sesame seeds inside. Cut chicken in easy-to-eat sizes. Have the vegetables boiled and garnish the plate with them.

Other Ways to Prepare:

Teriyaki-don - top a bowl of rice with teriyaki chicken and there you are.
Donburi - basically the same as teriyaki-don: 60% rice, fill the rest of the bowl with bite-size teriyaki chicken, add boiled egg and boiled vegetables to accompany the chicken topping, and season as you like with ground red hot pepper (togarashi; shichimi) or Japanese wild pepper (sansho).
Teriyaki burger - as simple as placing chicken between two buns. This could be done as a sandwich too. Add a little mayonnaise and lettuce.

1 cup = 200ml = 6.76 fl oz
1 tablespoon = 15ml = 0.5 fl oz
1 teaspoon = 5ml = 0.16 fl oz
